What are the different uses of potatoes?

There are more than 2000 varieties of potatoes in the world. Depending on the intended use, the following main areas can be defined:

Seed potatoes: potatoes that are small and usually harvested early as seed for next year’s crop

Early potatoes: potatoes harvested early with low starch content for immediate consumption
